Who can live through the fall without something yummy and pumpkin flavored? These are a staple in our home not only in autumn, but my kids request these year round!
When you combine the delicious flavor of pumpkin spice and add in chocolate, well honey, you got yourself an explosion of joy in your mouth! The only ingredients you need are a box of spice cake mix, a can of pumpkin, and a bag of chocolate chips. That’s it!
Preheat your oven to 350 and grease your muffin pan well. I used to use cupcake liners, but the muffins tended to stick to them too much. By greasing the pan instead you wont waste any of the muffin goodness!
I like to pour half of the cake mix into a big bowl with the whole can of pumpkin and mix with a fork til it’s well blended.
Add the rest of the cake mix to stir in and I usually add about a teaspoon of water to help moisten the mix to help it blend better. Make sure you’re reaching the bottom of the bowl and folding over the cake mix that you may have missed.
Once the pumpkin and cake mix are well blended add in about half of the chocolate chips. I normally use the jumbo, but any size will work. You can choose to use more or less of the chocolate chips depending on your personal taste.
Now that everything is ready, add your desired amount to each portion of your muffin pan. Mine is pretty big because we like our muffins to fill both hands.
